Pour Thoughts · New York City

Bar consulting in New York City.

Bar programs, cocktail menus, and the systems behind them — built for New York rooms, by someone who has actually run the pass. Serious about drinks. Not precious about it.

Pour Thoughts is the beverage-direction and bar-consulting practice of Henry Bowers. Seventeen years and hundreds of properties in, the argument is simple: the bar deserves the same culinary rigor as the kitchen, and most programs never get it. A great NYC bar program is not a list of trendy drinks. It is a menu that fits the room, specs your team can hit at 11pm on a Saturday, an ordering and prep system that protects your margins, and staff who understand why they are doing what they are doing.

If you run a bar or restaurant in New York and the drinks side is underbuilt, stale, or quietly losing money, that is the work. Below is how it usually breaks down.

What I do

The consulting

01

Bar program development

Concept, beverage direction, and a full menu built to fit your room, your volume, and your margins — not a template.

02

Cocktail menu R&D

New specs, costed and batched, with the prep sheets and build notes so the team executes it the same way every time.

03

Opening consulting

Launch menu, bar build and equipment input, vendor and ordering setup, and training so night one holds up.

04

Staff training & technique

Technique, speed, and consistency for your bartenders — the difference between a good recipe and a program that runs.

05

Systems & margins

Ordering, par levels, pour cost, and the operational systems that keep a beverage program profitable.

06

Ongoing beverage direction

A retained advisory relationship for groups and operators who want the program to keep evolving, not just launch.

How it works

The process

Walk the room. I start with what you actually have — the space, the team, the numbers, and the concept. No plan gets written before I understand the room.

Build the program. Menu, specs, batching, prep, and the ordering system, scoped to a flat project fee or a monthly retainer depending on how much you need.

Train the team. A program only counts if the people behind the bar can run it without me there. Training and documentation are part of the work, not an upsell.

Questions

Frequently asked

What does a bar consultant do?

A bar consultant builds or fixes the drinks side of a hospitality business: the cocktail and beverage menu, the specs and technique behind each pour, the ordering and prep systems that keep it running, staff training, and the numbers that decide whether the program makes money. Pour Thoughts does all of that for New York City bars and restaurants.

How much does a bar consultant cost in NYC?

It depends on scope. A one-off menu R&D sprint is priced differently than a full opening or an ongoing beverage-direction retainer. I scope each engagement to the property and the goal, then quote a flat project fee or a monthly retainer. Reach out with what you're building for a real number.

Do you work with new bar and restaurant openings in New York?

Yes. Opening work is a core part of the practice: concept and beverage direction, the launch menu, equipment and bar-build input, vendor and ordering setup, and training the opening team so the program holds up on night one and on a busy Saturday three months later.

Do you offer one-off cocktail menu development?

Yes. If you have a working bar but the menu has gone stale or the margins are off, I run focused menu R&D: new specs, a costed and batched build, and the prep sheets so your team can actually execute it consistently.
